Are you looking for a fast, healthy and low carb side dish for dinner? You know for those days when you eat a Frank’s Red Hot Chicken with Blue Cheese Grilled Cheese Sandwich followed by a whole Cinnaswirl Apple Cinnamon Roll topped with heavy cream cheese frosting and a generous drizzle of caramel. Oh my god. First let me tell you it was the most amazing and glutinous lunch I’ve had in years weeks.
So after a morning visiting the James Turrell Immersive Lights Exhibit at the Long Museum which was amazing and well worth the 200¥ entrance fee, my friends and I decided to grab lunch at Co. Cheese Melt and as we pulled up guess what’s right next door to this fine grilled cheese establishment?
Wtf people!! The whole time we’re stuffing our faces with grilled cheese the aroma of cinnamon goodness kept swirling past us… So of course we were going to have to satisfy our sweet tooth with one (or 7. Yes I bought 7… 6 for me and 1 for the kids. Just kidding! No I’m not!)
Well after this I knew dinner was going to have to be light if at all. But I also knew if I didn’t eat something before 7 I was going to be starving by 9.
For days like this I have a 10 minute solution. Why only 10 minutes? Because just because I indulged at lunch it doesn’t mean my family did. So I had to make them dinner as well as make myself something quickly (by 5pm I was still suffering from an intense food coma and the last thing I wanted to do was make 2 dinners).
Hence 10 Minute Cheesy Cauliflower Rice. Since I had the cauliflower already shredded (and that only takes 2 minutes anyways) I knew I could pull off this dish in less than 10 minutes. And I did!
10 Minute Cheesy Cauliflower Rice was the perfect fix for my dangerously unhealthy lunch.

10 Minute Cheesy Cauliflower Rice is not only easy to make but also low carb and super healthy!

- 1/2 Head of Cauliflower
- 2 tablespoons Olive Oil
- 1 small bunch of Green Onions
- 1 tablespoon Butter
- 1/4 cup shredded Cheddar Cheese
- Using a food processor with a grater attachment, a regular blade, or electric grater machine, grate the cauliflower. (You can also use a regular grater)
- In a large pan, heat olive oil and add the cauliflower rice.
- Sauté 7-10 minutes or until their soft.
- Stir in the butter and the cheese.
- Sprinkle with green onions and serve hot.
