Apple Pie Oatmeal Cookies | Recipe Nomad

It’s apple season in Shanghai and Goma Greens has just delivered its 2nd shipment of delicious apples. Once again, I’ve ended up with a lot of apples (30kg to be exact). Yep that’s a lot!

And instead of making batches and batches of apple sauce and apple butter I’m going to get creative and find some yummy recipes for these apples.

My first experiment?

Who doesn’t love Apple Pie?

Who doesn’t love oatmeal cookies?

Well put those two together and boom! Apple Pie Oatmeal Cookies!

They’re soft, bursting with apple pie flavor and I guarantee you can’t eat only one. I had 4… just to make sure they were good enough to serve my kids and good enough to put on the blog. You’re welcome…

Apple Pie Oatmeal Cookies are perfect for breakfast with a glass of milk. Or as an after school snack. Throw a couple in the kids’ lunch box. How about after dinner or during a movie. Do you see where I am going with this? These Apple Pie Oatmeal Cookies are delicious any time of day!

Ingredients

  • 3/4 cup Butter
  • 3/4 cup packed Brown Sugar
  • 1/2 cup Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Cloves
  • 1/4 teaspoon Nutmeg
  • Pinch of Cardamom 
  • Pinch of Salt 
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 3/4 cup Flour
  • 2 cups Oats
  • 2 Apples, finely diced
  • 2-3 pieces Candied Ginger, finely diced (optional)
  • Powdered Sugar Glaze
  • 1 cup Powdered Sugar
  • 2-3 tablespoons Milk

Instructions

  1. Cream butter and sugar for 3 minutes, scraping sides of the bowl. 
  2. Add eggs and vanilla. Beat to combine 
  3. Mix together the flour, baking soda, baking powder, salt and spices. 
  4. Add the flour mixture 1/2 cup at a time to the butter mixture with the mixer on. 
  5. Stir in the oatmeal, apples and candied ginger. Combine well. 
  6. Drop by rounded tablespoons, 2 inches apart on a parchment lined baking sheet. Press down slightly to flatten them. 
  7. Bake at 375 for 10-12 minutes. Cool on the sheet for 1 minute then transfer to a wire rack and cool completely. 
  8. Powdered Sugar Glaze
  9. When cool, whisk together the powdered sugar and milk- 1 tablespoon at a time to create a slightly thick icing. Drizzle over cooled cookies.

My kids love these cookies. They ask me to make them all the time. They taste exactly like Apple Pie!! Yummy! We love this recipe.
