After 6 weeks away from home, I am so ready to get back into my kitchen and make dinner. I didn’t cook at all in Toledo for those 6 weeks. We were pampered by parents, siblings and friends for pretty much every meal. It was a nice reprieve from the hours I spend in the kitchen every day in Shanghai.

One day in Toledo, my brother made short ribs in the slow cooker that smelled amazing! Unfortunately I didn’t get any of it, but it was still on my mind all those weeks later! So when I got back home, the first real meal I decided to make was an Asian Braised Short Ribs.

I bought the short ribs from Metro. They come in a 1 kilo package in the freezer section, however they’re also at Fields. Any who, once you get your hands on the short ribs, you can make this yummy dish for dinner! Ok before you freak out on the time it takes to make the Asian Braised Short Ribs keep in mind that it includes marinating time of 3 hours and cook time of 2 1/2 hours. So really, it only takes about 45 minutes of active time for this fabulous recipe!

To make this dish a healthier and lighter I only used only a kilo of beef short ribs and then added 1/2 pound of shiitake mushrooms. Shiitake mushrooms work really well with the Asian Braised Short Ribs. Even after cooking for 3 hours, they steal retain their meaty texture. In fact- I found myself sticking my fork in the pot during dinner searching for more of the yummy mushrooms!

I served the Asian Braised Short Ribs with Cauliflower Mashed Potatoes (recipe soon!), but you could also enjoy it with traditional mashed potatoes or rice!

Ingredients

  • 2 pounds (1 kilo) Beef Short Ribs 
  • 4 tablespoons Brown Sugar, divided
  • 4 teaspoons Sesame Oil, divided
  • 2/3 cup Soy Sauce, divided
  • 1/2 Onion, minced
  • 3 cloves Garlic, grated
  • 1 inch Ginger, grated
  • 2 tablespoons Vegetable Oil
  • 250g Shiitake Mushrooms
  • 2 cups Beef Broth
  • Chopped Cilantro

Instructions

  1. Marinate the beef ribs with the 1/4 cup soy, 2 teaspoons sesame oil, garlic, onions, 2 tablespoons brown sugar and ginger for 3 hours ( the longer the better)
  2. Heat 1 tablespoon Vegetable Oil in a large Dutch Oven (or oven proof pot). On high heat, place the beef ribs in the Dutch oven and brown all sides- about 5-7 minutes per batch. Remove and set aside.
  3. Add 1 more tablespoon vegetable oil and sauté the mushrooms until soft 3-4 minutes. Remove and set aside
  4. Mix the broth with the remaining sesame oil, brown sugar and soy sauce.
  5. Pour the marinade liquid and 1/2 cup of the beef broth into the pan on high heat and simmer, scrapping the bottom of the pan to remove the browned bits.
  6. Return short ribs to the pot. Top with mushrooms and pour in the remaining broth. Bring to a simmer.
  7. Cover the Dutch Oven with foil and place the lid on top.
  8. Cook at 325F for 2 1/2 hours. After 1 1/2 hours, uncover and check the liquid. If the liquid level is low add 1 cup of hot water. Return the lid to the pot and return to the oven for 1 more hour.
  9. The short ribs are done when they are extremely tender and fall of the bone with a knife.
  10. Garnish with cilantro.
  11. Serve with mashed potatoes or white rice.
