My sister in law went to a baby shower recently and raved about a Brie in Puff Pastry with Apricot Jam that she claimed was to die for. The conversation went something like this…

Me: How was the shower?

J: Oh my God they served this Brie with Apricot…

She’s about a 103 pounds on a bad day so if she thinks Baked Brie and Apricot is delicious then MY slightly more than 103 pound body is going to love it as well.

I got onto Pinterest and searched for this much coveted recipe and lo and behold it’s a quite popular Brie recipe. Maybe my sister in law is on to something…

So for book club this month (we read The Secret Chord if you’re wondering) I decided to make a version of the brie with apricots. I’m not a fan of brie wrapped in puff pastry. I think the puff pastry just gets in the way of all that gooey gooey brie cheese. It’s also added calories that my waist doesn’t need… So I just skipped the crust and popped the brie in the oven as is.

To really impress my lovely book club friends I decided to add crunchy pistachios to the jam. Do you know where the best place to buy pistachios is in Shanghai? MINISO. It’s a Japanese chain store similar to Muji that sells crap you don’t need but you buy anyways. Well they also sell some food including American Pistachios and are only 15RMB ($2) for 100g. The pistachios have the perfect crunch to  make Baked Brie with Apricot Jam and Pistachios. And take the extra minute to toast the pistachios to really bring out it’s flavor- but careful not to burn it. They really only take a minute or two to toast up.

Here’s a funny piece of info for you. When I cut open the cheese my mouth dropped. It had green spots inside of it and I immediately freaked out because I thought the brie had gone bad. But I just bought it. So I was really mad thinking where I bought it from sold me a rotted piece of cheese. After taking a deep breath and realizing this is unlikely since the cheese is from Fields (highly reputable online grocer in Shanghai), I checked the package and hold up!

It was Brie Au Bleu.

I don’t speak French, but it hit me… the cheese wasn’t rotted… No.

It was Brie with Blue Cheese.

I wasn’t sure how it was going to work but I took it to book club anyways and warned everyone it had blue cheese in it. And can I tell you something? The Baked Brie Au Bleu with Apricot Jam and Pistachios was spectacular! The flavor of the blue cheese with the creaminess of the brie, sweetness of the apricot jam and crunch of the pistachios was a heavenly marriage of flavors! So if you happen to accidentally buy a Brie Au Bleu instead of Brie, don’t freak out. This appetizer will still taste incredible~ I promise!

Ingredients

  • 1/2 cup Apricot Jam
  • 1/2 cup Toasted Pistachios
  • 2 Brie Cheese
  • Fresh Baguette, for serving

Instructions

  1. Preheat the oven to 350F.
  2. Place the Brie on the center of a baking sheet. Bake at 375F for 10-15 minutes. The brie is read when the center is soft.
  3. Meanwhile, toast the pistachios in a pan over medium high heat for 2 minutes. Be careful not to burn them.
  4. Add the apricot jam to the Pistachios and stir well.
  5. Heat through, reduce to very low and simmer for about 5 minutes. Jam should be thick.
  6. Remove the Brie and place on a serving plate or slate tray. Pour the pistachio Apricot Jam over the Brie. Serve warm with a fresh baguette.

Notes

This recipe makes enough for 2 Baked Brie with Apricot and Pistachios. You can easily half the recipe to only make 1 brie.

Agree completely about the brie baked in puff pastry! While the idea is great, I can never actually use the puff pastry to scoop up the melty brie. I'd much rather bake it alone and have some crackers to scoop. Great pairing with the apricots and pistachios.

I too fan of baked brie especially with some fruit spread. I like your recipe because it has not only apricot jam also pistachios. Nuttiness of pistachios sweet from apricot and on top brie yum. I agree with you don't mind about weight if I had this.

I have never seen a blue brie cheese and need some pronto!! I love mine wrapped in pastry adn even thought my way more than 103 pound body doesn't need it, I indulge since I don't eat it very often. Great recipe and I love that you used an apricot jam to cut through that richness!

I could live on brie. That gooey cheese spread on a small slice of artisan bread. YUM! I've never thought about adding bleu cheese with the brie. I can imagine how delicious it is plus the sweet apricot jam adds just the right touch. I'm pinning!

Brie is one of my favourite cheeses. It goes so well with jams and other sweet and fruity things! Pistachios bring a nice crunch to all that creaminess.

This sounds amazing! And I agree, I prefer my baked brie sans the puff pastry. It's hard to get the pastry to bake right because of all the moisture inside, and it just detracts from the cheese, IMO. This sounds absolutely perfect, and I love that you added pistachios to the apricot jam. What a great combo!

This baked brie was absolutely delicious- and I have to say, I missed the announcement at bookclub about the bleu cheese- I just thought it was Hanady's magic that made it taste SO good! Now I will be on the hunt for a Brie au Bleu! Who knew?!
