I’m not done with kohlrabi. Oh no no. We’ve only just begun. I am total in love with this vegetable. So far I’ve made Kohlrabi Fritters (yummy!), Kohlrabi Slaw (yummy!) and Roasted Kohlrabi and Radishes (yummy but photos didn’t turn out good enough to share it with you).

I was quite pleased with my 3 creations thus far. But.

There’s always a but isn’t there? Rhonda had been raving about these Baked Kohlrabi Fries that she made last week. Oh she loved them and went on and on. I have to be honest. I was feeling a bit jealous. Luckily Christina from Goma Greens gave me A LOT of Kohlrabi so I had a few left to make them.

Going back to Rhonda- she’s been putting Truffle Oil on everything these days- so still inspired by her, I decided to make Baked Kohlrabi Fries with Rosemary and Truffle Oil.

How were they? Let’s just say I ate the whole bowl (minus 1 that I gave my littlest Nomad). The. Whole. Bowl. Not over the course of a day but during a segment of The Flash. A. Segment. (ie In between commercials)

Oh and I’m not feeling guilty one bit. That whole bowl of Kohlrabi goodness only had 250 calories! Woot woot!

Baked Kohlrabi Fries with R

Save Recipe

Ingredients

  • 2 Kohlrabi, peeled and sliced into fries
  • 1 tablespoon Olive Oil
  • Salt, to taste
  • 1 tablespoon White Truffle Oil
  • 1 sprig Rosemary, leaves only
  • 2 tablespoons shredded Parmesan Cheese

Instructions

  1. Toss the kohlrabi with the rosemary, olive oil and sprinkle with salt.
  2. Preheat oven to 375F.
  3. Spread on a baking sheet and bake for 18-22 minutes.
  4. Sprinkle with cheese and drizzle with the truffle oil.
