It’s Christmas cookie time! Can you tell?

This is like the 3rd holiday inspired cookie recipe that I’ve done this week! Between Christmas cookie exchanges and class parties all of these cookie recipes are really working out perfectly since I’m a food blogger! Just like I’m looking for the perfect holiday cookie you are too. Whether you like peppermint, chocolate, stuffed cookies or fruit cookies, you’ll have plenty of options! Lsat week I shared a recipe for Gluten Free Cranberry Crinkle Cookies which where to die for! Well, the same day I made those, my son sent me a text message that he needed 25 cookies for his class Christmas party. I was short a few cookies (a lot shorter after Ransom, the photographer for Shanghai Family Magazine got his hands on them) so I had to come up with another cookie recipe.

Once again I found myself pressed for time. Photo shoot for the magazine and I was accompanying a friend for a dinner at a 7-Star Hotel (yes 7-Stars!) I had like 0 time to make him cookies but I can’t let me favorite son down. Since the Cranberry Crinkle Cookies were so freaking good and easy to make I decided to stick with the Crinkle theme but this time mix it up a bit with chocolate and peppermint flavors.

These Chocolate Peppermint Crinkle Cookies are so freaking good! Like seriously Crinkle Cookies where haveyou  been all my life! I added crushed candy canes to the batter to give it an extra peppermint flavor. Rolled out the dough and they were done in no time. A tip, unlike the Cranberry Crinkle Cookies, do not press down on these to flatten them. They look much prettier with the little bump. But again whether you press down or not it won’t change the flavor of the cookies so do as you wish.

Save Recipe

Ingredients

  • 1 Box Chocolate Fudge Cake Mix
  • 2 Eggs
  • 1/3 cup Vegetable Oil
  • 2 Candy Canes, Crushed
  • 2 teaspoons Peppermint Extract
  • 1/4 cup Powdered Sugar

Instructions

  1. Mix together all of the ingredients except the powdered sugar. The batter will turn into a play-dough like dough.
  2. Refrigerate for 15 minutes.
  3. Preheat oven to 375F.
  4. Roll dough into tablespoon-sized balls. Roll into the powdered sugar and place on a cookie sheet 2 inches apart.
  5. Bake of 9-11 minutes.

These cookies have the best flavor. They're perfectly soft and chewy with peppermint flavor! Once again, my kids ate these cookies in one day! Highly recommend these cookies!!
