With summer just around the corner, it’s time to put away the big heavy stock pots and prepare cooling meals to help you beat the heat. Being the huge soup fan that I am, that means no more mushroom soups, squash soups, celery soups….. But who said soup had to be hot? There are plenty of cold soup options out there that are exactly what your body needs this summer.
One of my favourite summer soups is Khiyar bi Laban which literally translates to Cucumbers in Yogurt.
Slightly diluted homemade laban, cucumbers, garlic, mint and salt and you’ve just made the tastiest and easiest cold soup you’ll eat all summer. Yep all that flavour and goodness takes less than 10 minutes to prepare. It’s like a soup-y Greek Tatziki that you gobble up with a spoon. Really Khiyar bi Laban is the perfect summer soup because it’s so refreshing while still being so healthy for you.
You can also make Cucumbers in Yogurt the day before. Actually the time in the refrigerator will help the yogurt develop a better taste so make the laban-garlic mixture in advance. Just add the cucumbers before serving or they’ll become soggy. And no one likes soggy cucumbers.
The perfect cold soup for the summer that you can make in less than 10 minutes!
- 4 small Cucumbers or 2 English Cucumbers. diced
- 2 cups Laban/ Yogurt
- 1/2 cup Water
- 2 Garlic Cloves, mashed
- 1 tablespoon Dried Mint
- Salt to taste
- Lemon juice, optional (see notes)
- In a large bowl, mix together the yogurt, water, garlic, mint lemon juice and salt. Stir well and taste, adding more salt if necessary.
- Refrigerate to develop flavours until ready to serve.
- Before serving stir in the cucumbers.
Make the yogurt mixture a day ahead and store in the refrigerator. Just add the cucumbers before serving. If you're using plain yogurt, you may want to add the lemon juice to give the yogurt a slight tanginess.
