Dorito Crusted Chicken Nuggets with Ranch Dressing l Recipe Nomad

When your kids are looking for a tasty afterschool snack, forget about frozen packages of chicken nuggets that are full of chemicals and processed meat. This recipe for Dorito-Crusted Chicken Nuggets, using Fields’ hormone and antibiotic free chicken is so delicious your kids will gobble up the entire plate. Don’t forget a generous dollop of homemade Ranch Dipping Sauce that tastes great with chicken nuggets and even better with carrots.

Ingredients

  • 2 cups Buttermilk (add 2 tablespoons white vinegar to a 2-cup capacity container then add enough milk to make 2 cups. Stir and aside for 5 minutes)
  • 2 pounds Chicken Breasts, cut into bite sized pieces
  • Salt and Pepper
  • 2 Eggs, beaten
  • 1 cup Flour
  • 1 bag Nacho Cheese Doritos 
  • 1 cup Sour cream 
  • 2 tablespoms Ranch Dressing Mix
  • Ranch Dressing Mix:
  • 1 1/4 cup Dry Milk (buttermilk is ideal)
  • 1/2 cup Parsley
  • 2 1/2 tablespoons Garlic Powder
  • 2 1/2 tablespoons Onion Powder
  • 1 1/4 tablespoon Dried Dill
  • 1 1/2 tablespoon Dried Chives
  • 1 tablespoon freshly cracked Black Pepper
  • 1 1/2 teaspoons Sea Salt

Instructions

  1. Mix together all of the ingredients for the Ranch Dressing Mix in a jar. Store in an airtight container.
  2. Soak the chicken in the buttermilk for 30 minutes to 2 hours. 
  3. Preheat oven to 400F. Lime a baking sheet with parchment paper then slightly grease. 
  4. Crush the chips in a food processor so they are very small pieces. Don't over process them or they'll turn into a powder and not crunchy. Spread out on a large plate. 
  5. Place the beaten eggs in a medium sized bowl. 
  6. Spread the flour on a second large plate. 
  7. Shake each chicken piece from the excess buttermilk. Dip in the flour, shake off excess, then the egg mixture. 
  8. Next coat the chicken with the Dorito crumbs, pushing down to completely coat the chicken. 
  9. Place the nuggets on the parchment lined baking sheet in a single layer. 
  10. Bake for 15 minutes. Serve hot with a side of Ranch Dressing Sauce
