I’m pretty much over classic mashed potatoes. Hold on now I said pretty much over not totally over them. I’m not anti-mashed potatoes I just can’t deal with the high carb and high calories especially since I always go in for a double serving of them. But instead of cutting mashed potatoes out of my diet completely I decided to make a healthier version of my favorite side dish.
Instead of using only potatoes I do a combination of low carb, low cal cauliflower and potatoes. It’s really a simple idea! By making the Cauliflower Mashed Potatoes with a 1:1 ratio of cauliflower and potatoes, this recipe still tastes like mashed potatoes without all the calories! You can even double or half the recipe! How great is that? Stick to this ratio and these Cauliflower Mashed Potatoes are perfect for even the pickiest eaters!

Ingredients
- 1 pound Potatoes, peeled and cut into small pieces
- 1 pound Cauliflower, florets only
- 2 tabslepoons Butter
- 1/2 cup MilkĀ
- Salt and Pepper to taste
Instructions
- Cook the potatoes and cauliflower in boiling water until very soft. Drain very well.
- Place in a bowl and mash with a potato masher.
- In the pot add the butter, milk and salt and pepper. Bring to a simmer. Add the mashed vegetables and stir well to heat through.
- Season with more salt and pepper to taste
