The latest trend in healthy eating is energy bites. Especially homemade, no bake energy bites. You can add your favourite ingredients combinations in the batter like white chocolate and cranberries, oatmeal and carrots, and nut butter and chocolate chips. I’ve seen an endless stream of energy bites on Pinterest with so many crazy combinations that I have been dying to make a batch.
Adding nut butters, like peanut, almond or cashew will give these cute little balls enough protein to keep you satisfied and full of energy all day. When Stone Ground sent me their butters to try, I knew exactly how I was going to transform these butters to something even more magnificent. I chose to use the Almond Butter with Sea Salt and Espresso Almond Butter, since I was going for a breakfast themed bite. The espresso added an extra kick of caffeine to get me through the day. I’m not going to lie, it was a bit tricky to get the consistency correct. A couple of tips to making the best Energy Bites ever:
- Keep your hands clean when rolling them. The stickier your hands become, the harder it will be to roll the balls.
- The recipe ingredients are approximate. You may need to add more or less oats based on how thick your nut butter is.
- Make sure to refrigerate before rolling. It’ll allow the oats to soak up the nut butter and stick together.
If you’re not in Shanghai and do not have access to Stone Ground’s Almond Butter’s you can substitute any other Almond Butter and add 1 teaspoon of ground espresso beans.
