Fried Blueberry Cheesecake Rolls

Sometimes you’re in the mood for a very guilty pleasure. Perhaps you’ve worked out every day this week. Or maybe you had a really stressful day with the kids. Or maybe you just want to eat something so damn good that you really don’t need to justify. To anyone.

Well that’s where I’m at today.

I missed my Piloxing class this week. Instead, I splurged at an 8 course dinner on Tuesday. The next day, I devoured a delicious Lobster Thermidor with french fries at Bull & Claw for Restaurant Week. And now Zumba is canceled due to low attendance. I told you I’m going to blame you for spiralling out of control today Veronica! 

I feel like I’m teetering on the ledge of an overeating abyss… I could pull myself back over the ledge but no.

No I’m not.

I’m going to scratch this week off. All the calories deliciousness that I ate didn’t happen.

It. Didn’t. Happen.

Before I get back on my calorie counting kick, I have one more culinary splurge up my sleeves…. 

I made Sloppy Joe Spring Rolls for dinner and had leftover wrappers. I also have a half-empty jar of homemade Blueberry Sauce that needs me. It needs me! Add a cheesecake filling and oh yeah, Fried Blueberry Cheesecake Rolls are about to come to fruition. 

I made a really simple no bake cheesecake filling with cream cheese, sweetened condensed milk, lemon peel and a smidgen of almond extract. Easy and simple yet so darn delicious! The 

I stuffed the spring roll wrappers with said filling and topped with a generous heap of Exploding Blueberry Sauce.

Then all you need to do is fry those babies up and boom! Fried Blueberry Cheesecake Rolls.

You can be fancy and top with a drizzle of blueberry sauce (liquid only unfortunately my maid threw away the liquid in the 3 minutes that I stepped out of the kitchen), a couple of blueberries and a sprinkle of powdered sugar. Or you could just eat them. Straight from the deep fryer.

At this point, I have no shame… I have officially fallen into the abyss… Please drop me a rope!

Fried Blueberry Cheesecake Rolls

Ingredients

    Cheesecake Filling8oz Cream Cheese, softened
  • 1/4 Cup Sweetened Condensed Milk
  • 1/2 Lemon, grated peel
  • 1/4t Almond Extract
  • Blueberry Sauce
  • Spring Roll Wrappers
  • Oil, for frying
  • Extra Blueberry Sauce, Powdered Sugar and Fresh Blueberries for Garnish

Instructions

    For the fillingIn an electric mixer, beat the cream cheese until creamy. While running the machine drizzle in the condensed milk, grated lemon peel and almond extract. Set aside.
    To AssembleLay one wrapper in front of you, like a diamond. Spread 2T of the cheesecake filling and top with 1T of Blueberry Sauce. With a pastry brush, wet the edges of the wrapper. Fold up the bottom, then tuck in the sides. Press well on the edges to make sure you've sealed the mixture inside the wrapper. Roll up and use water to seal the edges once more.
    To FryHeat oil and fry 3-5 minutes or until golden brown on the outside.
  1. Remove from oil and put on a paper towel to remove excess oil.
  2. Repeat with all of the rolls.
  3. To GarnishTop with a sprinkle of powdered sugar, a drizzle of blueberry sauce and 3-4 fresh blueberries.
  4. Serve warm.

Notes

Substitute the Blueberry Sauce with fresh blueberries or strawberries! Yummy!
