5 Minute Kale Pesto, with kale, olive oil, garlic, pine nuts and a full cup of parmesan cheese is a delicious twist on traditional basil pesto. So good, no one will believe it’s made with kale!

Kale Pesto wasn’t my idea. I pride myself in giving credit where credit is due. I think it’s really uncool for food bloggers to lay claim to a dish that wasn’t their idea. Not only did I not invent Kale Pesto, I didn’t even know it existed until Christina Freddie from Goma Greens  told me she wanted to include kale in next weeks box as well as a recipe for Kale Pesto.

I was like Kale Pesto? Are you sure? How about a Kale Salad?

But she was adamant- so adamant she dropped off kale and parmesan cheese at my house with a huge smile on her face. (I tried giving her back the cheese but she insisted and I was told by my friend Lisa to never argue with a Dane when they give you something. It’s rude.)

Well, I was going to have to make it now.

I wanted the Kale Pesto to have the same bite that you get with traditional pesto so I stuck to the traditional recipe for it but substituted the kale for the basil. In less than 5 minutes, this recipe makes 2 cups- enough to make 2 servings of Kale Pesto Pasta or get more creative! How about Chicken and Kale Pesto Sandwiches? Kale Pesto Bruschetta? So many yummy ideas for this recipe.

And kale is so healthy for you! It has Vitamin A, C, K, Folate, Omega-3, and enough fiber that it makes you feel full!

And it’s good! So freaking good!

Ingredients

  • 4 ounces (250g) Kale Leaves, remove thick stem part
  • 3/4 cup olive oil
  • 3 Garlic Cloves
  • 1 cup Parmesan cheese
  • 3/4 cup Pine Nuts 

Instructions

  1. Purée in a food processor for 3 minutes.

I love Kale and the extra flavor that it has aside from parsley! Did you massage it first like I have heard people say to do or did you just toss it in the processor. I have some baby kale that I bought at the store and was wondering as I was thinking about making a sauce with it and this would be perfect.

I've never heard of Kale Pesto until now. This really is a great idea. I've only made pesto with basil before and it requires so much fresh basil which I never can keep for long. I'm going try this soon since I usually have Kale on hand.

I've made pesto countless times throughout the years. I've even used parsley and cilantro. I've never used kale. This will certainly be a must try.

We love kale pesto, but often, I find that pine nuts are way too expensive. Often, I will substitute the pine nuts with walnuts. It makes a great tasting pesto!

I keep seeing kale pesto and kale pesto dishes around the internet but I have never made it. I have some kale at home, so I might just have to try it.
