I’ve gone from someone who never had kohlrabi to someone who totally loves it! I’ve done 2 recipes so far kohlrabi, but I think I finally found my favorite way to eat (this kind of but not really) cabbage- Kohlrabi Slaw! Move over traditional cabbage coleslaw, there’s a new slaw in town and it’s going to take over the world. Kohlrabi Slaw!
Why do I like the addition of the kohlrabi to coleslaw? It’s that sweet yet peppery flavor that tastes absolutely phenomenal. I tried the recipe with only kohlrabi and while it was good, it got mushy really fast. Adding some red cabbage to Kohlrabi Slaw helped the dish retain that yummy coleslaw crunch.
Kohlrabi Slaw is so perfect for summer barbecues! I love to top my burgers with a spoonful of coleslaw. Coleslaw burgers are popular in Lebanon and whenever I go back there I eat a burger at least once a week. They top the burger with french fries, ketchup and of course the coleslaw! Sounds crazy but you have to try it! It’s fantastic!

Ingredients
- 1 Kohlrabi Bulb, shredded
- 1 Carrot, shredded
- 1/2 head Purple Cabbage
- 1 small bunch Green Onions, sliced
- 1 1/2 tablespoons Honey
- 1 1/2 tablespoons Cider Vinegar
- 1/2 cup Mayonnaise
- 1/2 teaspoon Garlic Powder
- Pinch of Smoked Paprika
- Salt and Pepper
Instructions
- Mix all of the ingredients together.
- Refrigerate for 30 minutes to meld the flavors together.
- Serve with a slotted spoon.
