Nothing beats the Shanghai heat better than popsicles by the pool, so for the June/July issue of Shanghai Family Magazine I created a unique and easy recipe for Kumquat Strawberry Popsicles.
There’s no denying, Shanghai gets hot in the summer! My family’s first year here we did not leave until mid July and it was swelteringly hot and terribly humid, so when I tell you it gets hot believe me! There is no better way to stay cool in that kind of heat than lazing around the pool while enjoying an ice cold popsicle.
Of course the varieties of popsicle flavours are endless, but my family and friends really loved this recipe for Kumquat Strawberry Popsicles. When I tested the recipe I made 7 different flavors using a combination of lemons, limes, kumquats and calamansi limes. I invited several neighbors over for taste testing and in the end kumquat and limes was the flavor that overwhelmingly won. Personally I loved it with calamansi limes, regular limes and kumquat mix but the flavor is quite tart especially for kids.
Then it came down to sweetening the popsicles because together limes and kumquats are delicious but not very sweet. Some batches only included sweetened condensed milk, others only sugar, however the best combination was using both the condensed milk and sugar.
I used the Brazilian method of making lemonade, which is just throwing all of the ingredients in a blender with a bit of condensed milk then straining. No juicing, no removing the seeds and rinds. It’s such an easy and simple method you’ll be able to make these popsicles in less than 10 minutes and with very little mess! Bonus!
You could stop there and enjoy the mixture as a refreshing drink over ice, but be patient and take it one step further. Pour the mixture into your popsicle moulds and enjoy them frozen!
Kumquat Strawberry Popsicles are the ultimate summer cool down treat!
This recipe for Kumquat Strawberry Popsicles is fantastic because you can just through all of the ingredients in the blender, then strain it. That’s it! No squeezing fruit. No stirring in sugar. It’s 10 minutes of prep work and then 6 hours of freezing and your on your way to the perfect way to cool down this summer!

- 7-10 Kumquats, halved
- 1 Lime, quartered
- 1/4 cup (50g) Sugar
- 4 ounces (125ml) Sweetened Condensed Milk
- 3 cups (750ml) Water
- 8 ounces (1/2 kilo) Strawberries, smashed
- Puree all of the ingredients, except the strawberries in a blender for 2 minutes.
- Strain the pulp from the liquid, by carefully pushing everything through a sieve. Press down with a muddler or stir the mixture with a wooden spoon to help the liquid drain. Discard the pulp.
- Add a spoon of the smashed strawberries to the popsicles holders.
- Fill each popsicle holder 90% of the way.
- Insert sticks and freeze until solid (about 6 hours).
