Mediterranean Salad in a Cauliflower Rice Bowl | Recipe NomadRice bowls have been all the rage lately! I’ve seen them all of our Pinterest and at various restaurants in Shanghai, like Egg. Rice bowls have rice on the bottom (duh!) and then are topped with heaps of vegetables, proteins and a sauce to bring it all together.

But since I’ve been on a semi health kick and am totally in love with cauliflower rice, I’ve decided start making cauliflower rice bowls once a week. Since the cauliflower rice has such little calories you can really load up on lots of other vegetables and sauces to make it a really filling dish. I’ve had a hankering for eggplants and decided to saute them to top the cauliflower rice. The bowl is loaded with more Lebanese flavors, like tomatoes, cucumbers, olives, feta cheese, and of course my famous Lebanese Roasted Chickpeas– hence the name- Mediterranean Salad in a Cauliflower Rice Bowl! I love the salad-inspired vegetables in this bowl, but you could always use other vegetables too.

But the best part of all? Well the two best parts of all?

Humus and Pomegranate Dressing

The combination of the cauliflower, eggplants, crunchy chickpeas, humus, and the dressing is just amazing! There’s so much flavor in this little bowl. And best of all it’s vegetarian! Skip the feta cheese and this is seriously the ultimate vegan cauliflower rice bowl – but I love feta cheese too much!

Ingredients

  • 4 tablespoons Olive Oil
  • 1 large Cauliflower
  • 2 Eggplants, medium thickness sliced
  • 1 cup Lebanese Roasted Chickpeas 
  • 1 Tomato, diced
  • 1 Cucumber, diced
  • 1/2 cup Feta Cheese, crumbled
  • Olives 
  • 2 tablespoons Parsley, for garnish
  • 2 tablespoons prepared Humus
  • Dressing:
  • 1/4 cup Olive Oil
  • 2 tablespoons Pomegranate Molasses 
  • 1 Garlic Clove, grated 

Instructions

  1. Cut the Eggplant into medium-thickness rounds. Sprinkle with salt and place in a colander for 60 minutes to release the eggplants water. 
  2. Meanwhile, using a food processor with a grater attachment, a regular blade, or electric grater machine, grate the cauliflower. 
  3. In a large pan, heat 2 tablespoons olive oil  Add the cauliflower rice and sauté 7-10 minutes or until their soft. Set aside. Cover and keep warm. 
  4. Toss the eggplants with salt, pepper and remaining 2 tablespoons olive oil. Sauté in the large pan over medium high heat for 2-3 minutes per side. Set aside and keep warm. 
  5. In a jar, mix the olive oil, pomegranate molasses, garlic and salt. 
  6. To assemble each bowl, add a spoonful of rice to each bowl. Top with several pieces of eggplants, cucumbers, tomatoes, feta cheese and olives. Add a dollop of humus and drizzle with the Pomegranate Dressing.

I love Mediterranean cuisine and flavors and eggplant is one of my favorite vegetables. Thanks for a great vegetarian recipe and I am with you n feta. Love feta cheese and need it absolutely when cooking Middle Eastern cuisine :)

Just made this for dinner and it was so good! I replaced the cauliflower rice with quinoa and skipped the dressing since I couldn't be bothered to go shopping and it was still delicious. Next time I will hunt down some pomegranate juice and make my own molasses.

This is an awesome twist on the buddha bowls that everyone is making. It is reminding me of a Greek salad but I love the eggplant and can't wait to try that hummus and pom dressing!!

The dish looks and sounds amazing. I'm late on the rice bowl wagon, especially the cauliflower rice band wagon. But with this dish I believe I'd better hitch up quickly to that wagon so I don't miss a tasty ride.

I love the flavours in this dish! Any type of salad that incorporates cucumbers, tomatoes, and feta, is right up my alley. I can't wait to try this dish - it looks amazing!
