Mashed Potatoes, Baked Potatoes, French Fries… If you’re like me you have a potato rotation that works well for anything from a BBQ, to go along side Baked Chicken. But wow can that routine become very boring! As boring as that is, that’s the beauty of potatoes, they are so versatile and so delicious! My latest obsession?

Loaded Smashed Potatoes!

Wow… if you’ve never had a Smashed Potato, let me tell you a bit about them. First you boil the potatoes until they are super soft. Don’t rush this process. The softer they are the fluffier they’ll be when you roast them. If they are undercooked when you smash them they’ll kind of break up as oppose to mash. Does that make sense? You’ll know what I mean when you undercook or perfectly cook them. Then you pop brush the cute little potatoes with butter and a bit of seasoning and then the part that makes these Loaded Smashed Potatoes the best ever… roast them until they are crispy…. oh how I love them so much!!

They have this perfect mashed texture from the boiling and also a crispiness from roasting them in the oven. Then you can top them with whatever you want!

My personal favorite? Loaded!! Load these Loaded Smashed Potatoes with your favorite baked potato toppings – cheddar cheese, bacon, tomatoes, green onions and we cannot forget the best part- the sour cream! Potatoes and sour cream are like Peanut Butter and Jelly! Have you ever had hot french fries with sour cream? Wow! Life changing!

Ingredients

  • 12 Small Potatoes
  • 1/4 cup Butter, melted
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Smoked Paprika
  • 1 cup Shredded Cheddar Cheese
  • 1 cup diced Tomatoes
  • 1 small bunch Green Onion
  • 2-3 Slices of Bacon, cooked and diced
  • Sour Cream

Instructions

  1. In a large pot boil the potatoes in water for 20-30 minutes until they're VERY soft.
  2. Drain water. Grease a baking sheet and preheat oven to 375F.
  3. Place potatoes on the tray and use a masher or the bottom of a cup to smash them.
  4. Mix the butter, garlic powder and smoked paprika.
  5. Drizzle the potatoes with the butter mixture.
  6. Bake for 20 minutes. Sprinkle with cheddar cheese, bacon and tomatoes then bake for 5 more minutes.
  7. Top with sour cream and green onions.
