I love how versatile kale is! Whenever Goma Greens has kale in the box I am so excited to try something new with it Lately I’ve been on a pesto kick, trying out different flavor combinations. I really loved the Kale Pesto from a few weeks ago and thought I would try out another recipe this time using lots of mint. Why mint and not basil? Two reasons-

#1 I love mint!

#2 Christina from Goma sent over a huuuuuuuge bag of mint.

Can I just tell you, Mint Kale Pistachio Pesto is the BOMB!! It was so delicious I sat with a spoon and ate it straight from the food processor! Unlike traditional pesto or even Kale Pesto, Mint Kale Pistachio Pesto has a refreshing flavor (thanks to the generous cup of mint!) that is perfect for springtime! If you really love mint you can always add more mint and reduce the amount of kale you add. In this case you may need to adjust the amount of olive oil and lemon juice so make sure you taste it before you add more of anything.

One thing that surprised me was how perfectly the lemon complimented the mint flavor. I added a full juiced lemon to the Mint Kale Pistachio Pesto and the result was a yummy spring taste!

For dinner, I added a full cup to homemade risotto and topped it with smoked salmon. The whole family loved it! Mmmm!!!

Ingredients

  • 3 Garlic Cloves
  • 1 cup Fresh Mint
  • 1 cup Kale, stems removed 
  • 1 Lemon, juiced
  • 1 cup Olive Oil
  • 1 cup Pistachios, shelled
  • 1 cup Parmesan Cheese 
  • Salt and Pepper 

Instructions

  1. Add all of the ingredients to the food processor and process until smooth.
  2. Store in the refrigerator for up to 2 weeks.
