We might be a Lebanese family but we are a pasta loving family! Fettuccine, lasagne, spaghetti… if it has noodles my family is going to love it.

Spaghetti is a matter of contention though… Nomad #2 likes the sauce on the side. The rest of us like it with the sauce mixed in. Nomad #2 prefers jarred pasta sauce. The rest of us like it with homemade pasta sauce. Until this dish…

This One Pot Spaghetti Bolognese with Fresh Mozzarella brought Nomad #2 to the rest of the family’s side of the great spaghetti debate. All of her whining about my spaghetti disappeared the first time I made this dish. Not immediately though. First she whined and complained that she doesn’t like the sauce mixed with the noodles and in fact, why didn’t I just use a jar? Why why why!!!

I told her to eat the spaghetti I made or figure out something herself. Then she saw the chunks of fresh mozzarella and was like… Um ok I’ll try it!  (she so loves fresh mozzarella!!)

Guess what?

She loved it! Her love aside this is seriously my favorite way to make spaghetti! It’s so flipping easy.

It’s freaking delicious!!

A few tips to a successful one-pot pasta dish- pay attention to the liquid and remember to stir the noodles occasionally while cooking so they do not stick together. After grating parmesan cheese I freeze the rind and then toss it into my bolognese sauce. The rind is loaded with delicious flavor and adds an extra depth to your sauce. So the next time you have a parmesan rind, don’t throw it away- freeze it for later! Do not put the lid on the pasta when cooking. You want the liquid to evaporate so keep it off got it?

Ingredients

  • 2 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 onion, diced small
  • 6 Garlic Cloves, minced
  • 1 small bunch Basil Leaves, slices thin
  • 4 large (2 pounds) Tomatoes, diced small
  • 3 tablespoons Tomato Paste
  • 5 1/2 cups Water
  • 1 Parmesan Cheese Rind, optional 
  • 500g Spaghetti Noodles 
  • 200 g fresh Buffalo Mozzarella Cheese, cubed (or Parmesan Cheese)
  • Extra Basil Leaves and Olive Oil for garnish

Instructions

  1. In a large pot, sauté beef and onions in the olive oil. Add garlic and sauté one minute
  2. Add tomatoes, paste, basil, salt, pepper, parmesan cheese rind and water. Bring to boil then add noodles and stir regularly for 18-20 minutes or until the liquid has evaporated and noodles are al dente. 
  3. Stir in Buffalo Mozzarella Cheese
  4. Top each bowl with extra basil leaves and a drizzle of olive oil.
