I got the recipe for the Molasses Cookies from my friend Lisa. She makes them all the time and always brings me a couple. You really can’t beat good neighbors can you? I was craving them yesterday and instead of asking her to make me some I asked her for the recipe. As I was preparing to make them I saw a couple of oranges sitting in the fruit basket and my mouth started to water… Mmmm!! Orange and ginger is delicious together so I had a good feeling about adding oranges to the batter. I didn’t want to make them too orange-y, but you can easily double the amount of orange zest if you love orange-flavor.

I bought some Orange Extract in a Middle Eastern grocery store and love to add a bit of extract in orange recipes to really pump up the orange flavor. If you do not have orange extract use a tablespoon of orange juice.

While I usually like crunchy cookies, I much prefer these Orange Spiced Molasses Cookies to be nice and soft. Watch out for the oven time. The cookies are ready when they edges are hard but the center is still soft. After removing them from the oven let them rest for 5 minutes on the tray before placing them on a wire rack to continue to cool.

One more bit of information about these cookies is I used Demerara Sugar instead of granulated sugar. Demerara sugar is like a coarse granulated brown sugar. I really love the deep brown sugar flavor of it and they compliment the molasses in these cookies very nicely. Of course you can also use regular white sugar too!

Ingredients

  • 2 1/4 cup Flour
  • Pinch of Salt
  • 2 teaspoons Baking Soda
  • 1 teaspoons Cinnamon
  • 1 1/2 teaspoons Ginger
  • 1/2 teaspoon Ground Cloves
  • 1 Egg
  • 1/2 cup Vegetable Oil
  • 3 tablespoons Butter, melted
  • 1/3 cup Molasses
  • 1 cup Light Brown Sugar
  • 1 teaspoon Orange Extract or 1 tablespoon Orange Juice
  • 1 Orange, zested
  • 1/2 cup Demerara or Granulated Sugar

Instructions

  1. Preheat oven to 375F.
  2. Mix together all of the dry ingredients except the sugars. Set aside.
  3. In a large mixing bowl, beat together the egg, oil, butter, molasses, brown sugar, orange extract and orange zest.
  4. Add dry ingredients to the wet ingredients on low until a dough forms.
  5. Roll the dough into 2 inch balls. Roll the balls in the Demerara or granulated sugar.
  6. Place 2 inches apart on an ungreased baking sheet and bake for 8-10 minutes. Cookies are ready when the edges are hard but the center is still soft.
  7. Cool for 5 minutes on the sheet then transfer to a cooling rack.
