Peanut Butter Pita Pizza, topped with protein rich peanut butter, bananas and coconut flakes is the prefect breakfast for those mornings when you need an easy meal to feed your little ones!

With three kids you could imagine how wild my mornings are. Between dragging them out of bed, looking for missing shoes and reminding them to brush their teeth, by the time we get downstairs for breakfast all I have time to make is a bowl of cereal. And that’s great. The kids love cereal but not every day. The last thing any mom wants to hear 10 minutes before the bus arrives is, “I don’t want to eat this again!” So it helps to have an arsenal of 2 or 3 different, healthy and easy breakfast ideas that’ll make the whole family happy.

We finally finished school on Thursday the 23rd so Friday morning I decided to set the ground rules for the kids to make sure the rest of the summer goes by smoothly. Breakfast is up to them. They can have a bowl of cereal, or oatmeal, yogurt and fruit or they can make their very own Peanut Butter Pizzas. While these pizzas are a great breakfast idea, they are also delicious as a snack any time of day. The best part is the kids can make it themselves since they don’t need to use the oven or stove. It might be helpful to split the pitas and put them back in the bag, since splitting them without ripping them can be a bit tricky.

I spread a generous layer of Stone Ground’s Cacao Peanut Butter on each pita pizza, then topped them with my favourite toppings, sliced bananas and chocolate chips and a sprinkle of coconut flakes on top to look like “cheese.” Yo  could also top it off with a light drizzle of honey for an extra hint of sweetness and VOILA! Peanut Butter Pita Pizzas are ready in less than 5 minutes!

If you do not live in Shanghai and do not have access to Stone Ground’s Nut Butters, you can easily substitute plain peanut butter or Nutella. If you live in Shanghai do yourself a favour and keep a couple of jars of Stone Grounds Nut Butters on hand for breakfast emergencies. You’ll be glad you did!

Ingredients

  • 4 Small Pita Breads, split in half
  • 100g Cacao Peanut Butter
  • 2 tablespoons Coconut Flakes
  • 2 Bananas, sliced
  • 1/4 cup Chocolate Chips
  • Honey, optional

Instructions

  1. On each half of the pizza, spread a generous spoon of the Cacao Peanut Butter
  2. Top with sliced bananas and chocolate chips.
  3. Cover with coconut flakes and a drizzle of honey (if you want to)
  4. Slice up in quarters like a pizza and enjoy!

Notes

You can also use regular or crunchy peanut butter or Nutella.
