I love beets! I know not everyone does and I really cannot understand why. They are super nutritious, have a bit of sweetness and are very versatile! Once you roast them, they’re ready to be used in a variety of ways. From Roasted Beets Salad to pickled beets, there’s lots of yummy options. Throw some roasted beets in a salad and I’m in heaven. That’s why I love this Roasted Beets and Feta Cheese Quinoa Salad!

Talk about versatile! With the quinoa and beets as your base you can do whatever you want to the rest of the salad. Beets are super easy to roast. Just wrap them in foil and place them in the oven for about an hour. Check them after 45 minutes to see if you can easily pierce them with a knife. If you can then you’re good to go. If not, check again after about 10 minutes. Roasted beets are ready when you can rub the skin off.

I used feta cheese… why? Because I packed the goat cheese I planned on using in my son’s lunch box! That’s right… he went to school with a log of goat cheese instead of potato chips lol! But I love the tartness of the feta cheese with the sweetness of the beets. They really balance each other’s flavors. But I have to admit I really love goat cheese and beets too so if you have goat cheese at home, you can also use that.

Don’t like pecans? Use almonds or walnuts but make sure to toast them in a dry pan to really bring out their flavors.

Not a fan of mint in the salad dressing? How about using basil?

Ingredients

  • 2 cups Quinoa, cooked according to package directions
  • 2 Red Beets, cubed
  • 1/2 cup (100g) Feta Cheese
  • Salt and freshly Ground Black Pepper
  • 1/2 cup Toasted Pecans
  • Dressing:
  • 1 Garlic Clove
  • 1 cup (2 ounces/60 grams) Mint or other Fresh Herb
  • 2 tablespoons White Wine Vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon Mustard
  • 6 tablespoons Olive Oil
  • Salt and freshly Ground Black Pepper

Instructions

  1. Preheat the oven to 400F. Wrap each Beet in aluminum foil. Place on a baking sheet and bake for 50-60 minutes or until the Beet is tender and can be pierced with a fork. Peel the beets before using in the recipe. The skin should peel away easily; if it doesn't, the beets likely need to cook for a little longer.
  2. In a food processor process the ingredients for the salad dressing. Refrigerate until ready to use.
  3. Place the quinoa in a serving bowl. Top with the pecans, Feta cheese and beets. Season with salt and pepper.
  4. Serve drizzled with salad dressing.

Notes

This recipe is delicious at room temperature or warm.
