Roasted Cauliflower and Quinoa Salad

Nothing beats a roasted cauliflower especially when you add quinoa and drizzle over it a delicious Tahini-Dijon Dressing! Add an extra depth of flavor and sprinkle crumbled feta cheese over the salad! 

I eat lunch at Waga’s a couple of times a week. It’s China’s version of Panera. You’re guaranteed to find a delicious seasonal salad, hearty soups, filling sandwiches and plenty of juices to keep you full all day. So when I don’t have enough leftovers for lunch, I walk across the street to Waga’s and grab something yummy to eat. That’s where I fell in love with Roasted Cauliflower Salad. As I’ve mentioned earlier, I grew up in a simple cauliflower house.

Raw cauliflower for dip or fried cauliflower.

But roasted cauliflower!?! Where have you been all my life?

Just as delicious as fried but without all of the calories and it’s perfect addition to your salad. Oh the wonderful world of cauliflower. But oh I digress…

In love, every few days I would walk over to Waga’s and order the Roasted Cauliflower Salad. But then one day, which started off like any other, I walked across the street only to discover that salad was gone!

Of course, replaced by another delicious salad. A delicious salad that was not the Roasted Cauliflower Salad.

Before I got too sad, I remembered that I am RECIPE NOMAD! I can and I will recreate the dish and make it 10 zillion times better. And I did. You’re welcome!

Roasted Cauliflower and Quinoa Salad

Ingredients

  • 2 tablespoons Olive Oil
  • 1 head of Cauliflower, cut into large florets
  • 1 Carrot, cut into 16 sticks 
  • 8 Garlic Cloves, with skin on 
  • 1/2 cup Raisins
  • 1/4 cup halved Macadamia Nuts
  • 6-8 sprigs Thyme
  • 1 cup Quinoa
  • 1 bunch of Cilantro chopped
  • 1 bunch of green onions, chopped
  • Feta Cheese, optional
  • Tahini Dijon Dressing
  • 2 tablespoons Tahini
  • 1 tablespoons Dijon Mustard
  • 1/4 cup Olive Oil
  • 2 tablespoon Honey
  • 1 lemon, juiced

Instructions

  1. Preheat oven to 400F oven (200C). 
  2. Toss together the cauliflower, carrots and garlic with the olive oil, salt, pepper and thyme. 
  3. Layer on a baking sheet and roast for 45-50 minutes or until the vegetables are tender and the cauliflower is golden brown. 
  4. Meanwhile cook the quinoa according to the package directions. 
  5. Whisk together the dressing ingredients. 
  6. When vegetables are ready remove from the oven and allow to cool. Peel the skin off of the garlic. 
  7. In a large mixing bowl toss together the quinoa, raisins, macadamia nuts, dressing and vegetables. Before serving add the green onions and cilantro. Stir to combine.

I can eat salads everyday. This salad is definitely becoming my "go-to" salad for lunch. The cauliflower with the quinoa and Tahini Dijon dressing has really good flavors. Extremely good!! Highly recommend.

What a wonderful recipe, cauliflower is my favourite vegetable when in season and roasting it is pretty much my favourite way of cooking it.
