We love our Mexican food around here. And by Mexican I mean American Mexican food. I get it that a lot of the ethnic foods we make in the USA have been Americanized- especially Mexican recipes. Traditionally you don’t put rice in tacos, but I like to add a scoop of my favorite Salsa Rice to them. The Salsa Rice adds a fabulous flavor to the meat! I also really really love Salsa Rice with Bean Burritos!
Any salsa will work with this recipe. You can try it with Green Salsa, Chipotle Salsa, Salsa with Beans, and whatever brand you want. It’s so easy you’ll ask yourself Why didn’t I think of this?

- 1/2 Onion, finely chopped
- 2 tablespoons Olive Oil
- 1 cup Rice
- 1 cup Water
- 1/2 cup Salsa
- 1/2 teaspoon Cumin
- Green Onions to garnish
- Sauté the onion until softened and translucent in the olive oil. And the cumin, rice and salsa and stir to combine with the onions.
- Pour in the water and mix well. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 15 minutes.
- Garnish with green onions and serve alongside your favorite Mexican dish.
