My only regret with this Spinach Risotto recipe? That I didn’t double it! I used a standard ratio of water to risotto rice from a cookbook that I bought in Italy. The first time I made risotto I didn’t read the directions and I just dumped the water in with the rice. I only stirred it a few times. Right away I knew I screwed up. I remembered a Chopped episode where the judges commented about a contestants technique. That criticism popped in my head and I was like NOOOOO! I didn’t slowly add the liquid, stirring until absorbed. To be honest the risotto tasted delicious, but you just can’t call it risotto. It didn’t have that heavenly creaminess that risotto is known for. Since then I am super careful about my risotto.

A good risotto needs to have the liquid slowly stirred in and fully absorbed before you add more liquid. The spinach and onions add an extra flavor to the risotto. I love the creaminess of a Spinach Risotto and this recipe is extra creamy because I added cream cheese at the end of cooking the rice to make it super creamy! Oh was it delicious! Have I told you yet that I loved this dish!

The best part of all is the handful of crispy fried shallots! If you don’t have shallots, you could easily fry onions instead. Grab a spoon and dig into this Spinach Risotto with Fried Shallots! It’ll be your favorite risotto ever!

Ingredients

  • 1/2 pound (250g) Fresh Spinach 
  • 1/4 cup Butter
  • 1 small Onion, finely chopped
  • 1 3/4 cups Risotto Rice
  • 4-4 1/2 cups Boiling Vegetable Stock
  • Freshly Ground Black Pepper
  • 1/2 Lemon, juiced 
  • 1 Lemon, zested
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Cream Cheese
  • 1 cup thinly sliced Shallots 
  • 1/2 cup Vegetable Oil 

Instructions

  1. Sauté the Spinach in 2 tablespoons water until wilted. Drain out excess water and chop. 
  2. Melt the butter in a pot over medium heat. Sauté the onions for 4 minutes. Add the rice and sauté 2 minutes. Add 1/2 cup stock and cook, stirring constantly until absorbed. Add the spinach and stir well. Continue adding 1/2 cup of liquid at a time cooking until each addition has been absorbed. This process will take about 15-18 minutes. Season with salt and pepper.
  3. Add the cream cheese at the end for extra creaminess.
  4. For the fried shallots:
  5. Heat the oil over high heat in a frying pan. Add the shallots and sauté until they start to brown. Reduce heat to low and continue sautéing until they are golden brown, stirring often. 
  6. To assemble
  7. Top with the fried shallots, lemon zest and sprinkle with parmesan cheese.
