These yummy Sweet Potato Stacks with Maple Syrup Glaze and Pecans are the perfect compliment to your Thanksgiving dinner or just because!

Potatoes are yummy and they come in so many different varieties. There’s Russet Potatoes to German Fingerlings, Sweet Potatoes and even Purple Potatoes! But I love sweet potatoes the most! On Thanksgiving I am the only one who eats the sweet potato dish. All that savoury food, I really need something sweet to change up the flavors in my mouth.

As a kid sweet potatoes came in from a can. Yep! My grandparents and even my mom would just open a can, dump it in a casserole dish, plop some marshmallows then broil. And those were damn yummy! There’s no shame in sweet potatoes from a can, but if I could be honest with you for a second…. Fresh Sweet Potatoes are the bomb!! Seriously!

There are plenty of ways to make them too, but I love this Sweet Potato Stacks method! Thinly sliced, covered in a buttery-maple glaze…. I’m drooling just thinking about them.

 

And while they are sweet, Americans usually serve their sweet potatoes as an accompaniment to dinner- not a dessert. It tastes delicious with turkey or chicken, but you could even enjoy it as a semi-healthy dessert…

Somewhere under the layers of buttery-mapley goodness there is a vegetable in there after all right?

These yummy Sweet Potato Stacks with Maple Syrup Glaze and Pecans are the perfect compliment to your Thanksgiving dinner or just because!

Ingredients

  • 2-3 Sweet Potato, peeled and sliced thin
  • 1 cup Toasted Pecans
  • 4 tablespoons (50g) Butter
  • 1/4 cup Maple Syrup 
  • Pinch of cinnamon
  • Pinch of Salt 

Instructions

  1. Preheat oven to 375F.
  2. Heat the butter, maple syrup, salt and cinnamon in a pan to create the glaze. 
  3. Lightly grease a cupcake pan. Brush the butter-syrup mixture on a slice of sweet potato and place it in the cupcake pan. Repeat with 5-6 sweet potatoes to make a stack. Brush the top layer of sweet potato with extra butter mixture. 
  4. Add the pecans to the remaining butter mixture. Stir to coat. Add a spoonful of the pecans to the top of each sweet potato stack. 
  5. Bake for 30-40 minutes or until the potatoes are soft. 
  6. Use a spoon to carefully remove the stacks from the pan. Serve hot as a side dish or for dessert. 

Notes

You may need to trim the sweet potatoes to fit in the cupcake tins.

Mmmm - these little stacks sound wonderful - almost like a healthier, portion controlled, sweet potato pie - in stack form! Those buttery layers and that pecan topping - simply mmm mmm mmm

What a super delightful dessert for all sorts of entertaining! Do they stand up easily after being cooked? I'm just thinking if they'll work on a buffet table.
