I was inspired to make it after having the Truffle Cream of Corn on girls night out at Liquid Laundry in Shanghai. We got a few sides to share and after one bite I regretted my sharing decision. I wanted the Truffle Cream of Corn all for myself. It’s decadent and rich, infused with truffle oil, but not overbearingly so.

When I was a kid we ate cans of Cream of Corn at Sunday dinner. The texture is like mush. Few if any real kernels of corn. Just a soupy concoction flavored like corn. But now that I am a big girl- and that I cannot find Cream of Corn in Shanghai (or at least not a reasonable price- I have been making homemade Cream of Corn. It’s actually quite easy and delicious. I love the chunks of corn kernels in the mixture. Adding truffle oil just made the recipe that much better because truffle oil makes everything taste better. Now a few notes about truffle oil. It can be overwhelming, so start slow by adding a 1/2 tablespoon to the Truffle Cream of Corn. Need more truffle oil? Add a 1/2 teaspoon at a time until you’ve reached the desired flavor. I added a sprinkle of Truffle Sea Salt to mine but if you do not have it then you can add sea salt and just a tad more truffle oil.

Ingredients

  • 4 Ears of Corn
  • 2 tablespoons Butter
  • 5 small Shallots
  • 1/2 tablespoon black Truffle Oil + extra for garnish
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese
  • Truffle Sea Salt, as desired

Instructions

  1. Boil corn. Drain and set aside
  2. Melt butter and sauté the Shallots until soft. Pour in the truffle oil, heavy cream and parmesan. Bring to a simmer.
  3. Mix with the corn. Season with freshly grind black pepper and Truffle Sea Salt to taste.
  4. Place in a small casserole bowl.
  5. Bake 400 20 minutes
  6. Remove from oven and drizzle extra Truffle Oil.
